Extra Virgin is an unrefined oil - the highest quality olive oil available. There are very specific standards an oil must meet to receive the Extra Virgin label.

Due to the production method, Extra Virgin retains more genuine olive flavour and has a lower oleic acid content than regular olive oil. Extra Virgin has an acidity of maximum 1%, compared to 3-4% for regular olive oil.

It contains more natural vitamins and minerals, including important antioxidants and anti-inflammatory compounds that make Extra Virgin oil so special.

It usually has a golden-green colour with a pronounced flavour and a light peppery finish. Good Extra Virgin tingles in the throat when swallowed neat.

Regular or pure olive oil is usually a blend of first-press and refined olive oil, with a lighter colour, more neutral flavour and acidity between 3-4%. This is an all-purpose cooking oil.

Although you can cook with extra virgin olive oil, it has a lower smoke point than many other oils, meaning it burns at a lower temperature. On our website we sell extra virgin olive oil with a high smoke point, which makes it suitable for cooking and frying.
